My wife, who is a vegetarian and the rest of the family, who are not, love this best vegetarian French onion soup recipe. It’s a fairly easy recipe but the results are amazing.

First of all, I start with three good-sized onions. I use either Vidalia or Yellow Onions. Slice them against the grain and then take the slices and cut them in half. Next, I break up the onions into slivers. Then place them in a deep pan (2-quart size) and add salt (about a tablespoon ). On high heat, I constantly stir to caramelize the onion until it is golden brown.

Once the onions are caramelized, I use one vegetable bullion per cup of water and add enough water to fill the pan about 3/4 full (about 6 cups). Once the liquid comes to a boil, I lower the heat so that the soup simmers for about 30 minutes. Plus, I also add a cup (8 oz) of either Burgundy, Shiraz, or Cabernet Sauvignon to the soup.

Then after 30 minutes, I place the soup into deep bowls, filling them up to 3/4 full. I like cutting French bread to place on top of the soup. Then I add a generous amount of favorite grated cheese (either mozzarella or Kraft Italian blend cheese).

Turn the oven temperature to 350 and place the bowls in the oven. Normally, I set the oven timer for 30 minutes. After 30 minutes, I check to see if the cheese has completely melted and has a golden color. If not, I check the soup about every 5 minutes to get the results that I’m happy with. Once it gets to what appears (see below), it is ready to pull out of the oven and ready to be served!

Along with this best vegetarian French onion soup recipe, the Cabernet Sauvignon is a great wine to pair with this soup! Bona Petite!!
