To begin with, I put 3 heaping teaspoons of each spice in a plastic quart-sized zip lock bag. Then I mix the spices by shaking the bag.

This amount of spices should easily coat 4 good-sized chicken breasts and use up all the spices. If you are like me, you hate to waste any of those precious spices. Occasionally, I had to add a bit more to the last piece. If that happens, I generally mix 1/2 teaspoon of all the spices, and that seems to work out well without wasting any spices.

Then I place the chicken breast in the zip lock bag. Together with the spices, I vigorously shake the chicken to evenly coat it with the spices. Note: I do not pat down the chicken to get it dry on the outside. Generally speaking, I just take it out of the package and place it right into the bag.

We enjoy grilling the chicken this way. Mainly, the chicken develops a thin crust by grilling it at a low temp for a long time. As a result, the chicken is moist inside. This is the best grilled chicken we have eaten in our lives. The combination of spices and smoke no doubt makes this a winning recipe! Not to forget, this goes very well with Chardonnay wine!
